Khamtay is a staple white rice cultivated in the Punakha-Goenshari region. Othbar grows and mills it organically for the fluffy, comforting rice that anchors every Bhutanese meal.
Rinse 1 cup rice until water runs clear. Combine with 1.5 cups water, bring to boil, then simmer covered on low for 15–18 minutes. Rest 5 minutes before fluffing. Also ideal for fried rice and rice porridge.
Store in airtight container in a cool, dry place. Protect from insects with bay leaves if needed.
